Chef Kurt is throwing down another recipe for you to impress others with. This week it's a Frittata. It's the sister of the omelette.

6 eggs, beaten
1/4 t. black pepper
1/2 t. kosher salt
1 t. butter
1 T. olive oil
1/4 c. chopped asparagus
1/2 c. sliced shiitake mushrooms
1/2 c. diced ham or your favorite meat
1/4 c. shredded gruyere or Swiss cheese
1 T. chopped fresh parsley

preheat broiler in your oven on high

mix eggs well in a mixing bowl or blender and season with salt and pepper

Heat 10 or 12-inch non-stick saute pan over medium heat. Add butter and oil to pan and sauté mushrooms, asparagus and ham to pan for 2 to 3 minutes.

Pour egg mixture into pan and stir with spatula for 45 seconds or until eggs start to cook. Cook for 3 to 4 minutes or until the egg mixture has set on the bottom, sides, and begins to set up on top. Sprinkle with cheese and parsley parsley.

Place pan into oven and broil for 3 to 4 minutes, until lightly browned and fluffy.

Remove from pan and cut into 6 servings. Serve immediately.
