I am a big fan of my corned beef hash well done, crispy. My favorite breakfast would be a plate of crispy, corned beef hash topped with two poached eggs. Plain and simple, the egg yolk adds richness to the hash.

Some of the best hash I ever consumed was at Beggar's Banquet in East Lansing. It's been about twenty years since I had brunch at Beggar's but their roast beef hash is some of the best hash that has ever hit my tastebuds.
