The story goes that back in 1964, chicken wings were considered 'scrap' and they were mostly used for soup.

A restaurant owner in Buffalo, NY, received a shipment of wings by mistake.  She was angry, wanted to send 'em back to the distributor, but her husband talked her out of it (voice of reason) and suggested she try something with them.  And so was born, 'Buffalo Wings' - check out the full story here.
